200g plain flour
200g caster sugar
4 ripe bananas
50g butter
1 tsp vanilla bean paste (can substitute with essence)
1 tsp cinnamon powder
1 tsp bicarbonate of soda
1 tsp baking powder
1 egg
Optional additions –
Hand full of – chocolate chips, chopped pecans, chopped walnuts, dried banana chips
· Pre heat oven to 180° C FAN
· Line loaf tin with baking parchment
· Mash bananas in a bowl
· Add all other ingredients (I added chocolate chips and pecans) and mix well together (I used a kitchen aid but can be done by hand mixer or wooden spoon) and pour into loaf tin
· Place in oven and cook for 50-60 minutes or until a skewer come out clean
· Turn out of tin after 10 minutes and allow to cook - Eat!!
If you can resist, this will last up to 5 days in the fridge
To serve we also made some cinnamon butter - soft butter, icing sugar and cinnamon whipped together to form a smooth paste.
